Broth Preparation

Roasting the Bones
Preheat your oven to 200°C (400°F). Spread the beef bones on a baking sheet and roast for 30 minutes until browned.

Simmering the Broth
In a large pot, add the roasted bones and 4 liters of water. Bring to a boil, then reduce to a simmer.

Adding Flavor
Add soy sauce, mirin, sliced ginger, crushed garlic, and chopped green onions to the pot. Simmer gently for at least 2 hours, adding water if necessary to maintain liquid level.

Seasoning
Taste the broth and add salt as needed.
Noodles & Assembly

Cooking the Noodles
In a separate pot, boil water and cook the ramen noodles according to package instructions (usually about 3-5 minutes). Drain and set aside.

Preparing the Toppings
In the last few minutes of the broth cooking, add the fresh spinach and mushrooms to the broth to soften them.

Assembling the Bowls
In serving bowls, divide the cooked ramen noodles. Ladle the hot broth with vegetables over the noodles. Top with bean sprouts, soft-boiled eggs (halved), and sprinkle sesame seeds and chili oil to taste.
