Prepare the Ingredients

Start by slicing the beef sirloin into thin strips against the grain. Chop the onion, mince the garlic, and grate the ginger. Slice the green onions into thin rings, separating the white parts from the green.

Cook the Beef

In a large pot, heat the vegetable oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the pot and set aside.

Sauté the Aromatics

In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant, about 2-3 minutes.

Add the Broth and Seasonings

Pour in the beef broth, soy sauce, and mirin. Bring the mixture to a simmer. Add salt and black pepper to taste.

Cook the Udon Noodles

Add the udon noodles to the simmering broth and cook according to package instructions, usually about 5-7 minutes, until the noodles are tender.

Combine with Beef

Once the noodles are cooked, return the browned beef to the pot. Stir to combine and heat through for another 2-3 minutes.

Serve

Ladle the beef udon into bowls, garnish with the green parts of the green onions, and drizzle with sesame oil before serving.
