Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed sushi rice and water in a rice cooker or a pot. If using a pot, bring to a boil, then cover and reduce heat to low, cooking for about 18-20 minutes until water is absorbed.

Season the Rice
Transfer the cooked rice to a large bowl. In a separate small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold it in using a spatula. Allow the rice to cool to room temperature.

Soften the cream cheese at room temperature for easier spreading.

Lay Out the Nori
Place one nori sheet on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top.

Arrange your choice of fillings (salmon, tuna, cucumber, avocado, cream cheese) in a line across the center of the rice.

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge by wetting it with a little water.

Use a sharp knife to slice the roll into 6-8 pieces. Clean the knife between cuts for neat slices.
