Preparation of Black Beans

Rinse the black beans under cold water and soak them in water for at least 4 hours or overnight for best results.

In a large pot, add the soaked beans, 4 cups of water, salt, and ground cumin. Bring to a boil over medium-high heat, then reduce to low heat and simmer covered for about 1 to 1.5 hours, or until the beans are tender. Stir occasionally and add more water if necessary.

Once the beans are cooked, heat olive oil in a pan over medium heat. Add the cooked beans and sauté for 5-7 minutes, allowing them to absorb the flavors. Mash some beans with a fork for a creamy texture, if desired.

While the beans are cooking, prepare the toppings. Wash and chop the lettuce into bite-sized pieces, and set aside. If necessary, prepare the guacamole by mashing ripe avocados and mixing in lime juice, salt, and any desired seasonings.
