Method
For the Pollo Asado
Marinate the Chicken
In a large bowl, combine minced garlic, olive oil, lime juice, cumin, paprika, oregano, salt, and black pepper.
Prepare the Chicken
Add the chicken quarters to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
For the Corn Tortillas
Prepare the Dough
In a mixing bowl, combine masa harina and salt. Gradually add water and mix until a soft dough forms.
Shape the Tortillas
Divide the dough into 12 equal pieces. Roll each piece into a ball and flatten them using a tortilla press or a rolling pin.
Cook the Tortillas
Heat a non-stick skillet over medium heat. Cook each tortilla for about 1 minute on each side, until slightly browned and cooked through.
For the Side Dishes
Prepare the Rice
In a small pot, combine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked.
Heat the Black Beans
In a saucepan, heat the rinsed black beans over medium heat until warmed through, about 5-7 minutes.
Garnish and Serve
Once the chicken, tortillas, rice, and beans are ready, serve the pollo asado with corn tortillas, black beans, and rice. Garnish with chopped cilantro and serve lime wedges on the side.
