Refried Beans Preparation
1. Soak the Beans
Rinse and soak black beans overnight in water. Drain before cooking.
2. Cook the Beans
In a pot, add the soaked black beans and cover with water. Bring to a boil, then reduce to a simmer and cook until beans are tender, about 1.5 to 2 hours.
3. Sauté Onions and Garlic
In a separate skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened and translucent.
4. Combine Beans with Sauté
Once the beans are tender, drain them, reserving some cooking liquid. Add beans to the skillet with onions and garlic.
5. Mash the Beans
Mash the beans with a fork or potato masher, adding reserved cooking liquid as needed to achieve desired consistency. Stir in cumin, salt, and pepper to taste.

Sprinkle queso fresco over the refried beans after mashing.

7. Prepare Tortillas
Cut corn tortillas into triangles.
8. Fry Corn Chips
In a deep frying pan, heat vegetable oil over medium heat. Once hot, fry the tortilla triangles in batches until golden brown and crispy, about 2-3 minutes per batch.
9. Season Chips
Remove chips from oil and drain on paper towels. Season with salt while still hot.
Serving
10. Serve Anafres
Serve the refried beans topped with queso fresco in a traditional clay oven or a serving dish, alongside the freshly made corn chips.
