In separate bowls, prepare the chicken, steak, and vegetarian fillings. For the chicken, mix the shredded chicken with chili powder, ground cumin, and salt to taste. For the steak, combine the shredded steak with garlic powder, onion powder, and salt to taste. For the vegetarian filling, combine black beans, corn, diced bell pepper, cumin, and salt to taste.

Fill the Tortillas

Warm the corn tortillas in a dry skillet or microwave until pliable. On each tortilla, layer a portion of each filling (chicken, steak, and vegetarian) in the center.

Roll the Tortillas

Carefully roll each tortilla around the filling, placing seam-side down in a baking dish.

Add Toppings

Pour the Salsa Ahora over the rolled tortillas, ensuring they are well coated. Sprinkle the shredded cheese evenly over the top.

Bake

Preheat your oven to 350°F (175°C). Bake the enchiladas for about 20 minutes, or until the cheese is melted and bubbly.

Serving

Serve with Sour Cream

Remove from the oven and let cool for a few minutes. Serve the enchiladas hot, garnished with a dollop of sour cream.
