Method
Marinating the Steak
Prepare the Marinade
In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Whisk until well mixed.
Marinate the Steak
Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it's fully coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Cooking the Steak
Preheat the Grill
Preheat your grill to medium-high heat.
Rest the Steak
Once cooked, transfer the steak to a cutting board and allow it to rest for 10 minutes before slicing.
Preparing the Side Dishes
Heat the Refried Beans
In a saucepan over medium heat, warm the refried beans until heated through, stirring occasionally.
Cook the Mexican Rice
Prepare the Mexican rice according to package instructions, and keep warm until ready to serve.
Serving
Slice and Serve
Slice the rested steak against the grain into thin strips. Serve with warm corn tortillas, refried beans, and Mexican rice. Garnish with chopped cilantro, diced onion, and sliced avocado.
