Preparing the Steak

Season the Steak

In a small bowl, mix together the olive oil, garlic powder, cumin, chili powder, salt, and black pepper. Rub this mixture all over the steak.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Once hot, add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until the desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

Building the Burrito

Prepare Ingredients

While the steak rests, prepare the remaining ingredients: drain and rinse the black beans, cook the rice if not pre-cooked, and shred the cheese.

Assemble the Burritos

Lay a large flour tortilla flat on a clean surface. Start with a scoop of rice, followed by black beans, shredded cheese, salsa gringa, shredded lettuce, guacamole, and a dollop of sour cream. Finally, add a few slices of the rested steak.

Wrap the Burrito

Fold the sides of the tortilla inwards and then roll from the bottom up to create a tight burrito. Repeat this process for the remaining tortillas and fillings.

Serve

Cut the burritos in half if desired, and serve with extra salsa gringa and sour cream on the side.
