Preparation
Cook the Chicken
In a skillet over medium heat, add a drizzle of olive oil. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.
Prepare the Rice
If you haven't done so already, cook the white rice according to package instructions and set aside.
Prepare the Black Beans
In a small saucepan, heat the black beans over medium heat until warmed through. Stir occasionally and season with a pinch of salt.
Assembly
Assemble the Burrito
Take a large flour tortilla and lay it flat on a clean surface. In the center of the tortilla, layer 1/2 cup of cooked rice, 1/4 cup of black beans, 1/2 cup of sliced chicken, 1/4 cup of shredded cheese, 1/4 cup of shredded lettuce, and a generous spoonful of salsa gringa, guacamole, and sour cream.
Wrap the Burrito
Fold in the sides of the tortilla over the filling, then roll it up from the bottom to the top, ensuring it is tightly wrapped. Repeat this process for the remaining tortillas and fillings.
Serving
Serve and Enjoy
Slice each burrito in half and serve with additional salsa gringa, guacamole, and sour cream on the side.
