Cook the Shrimp

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add the diced red and green bell peppers and chopped onion to the skillet. Sauté for about 5 minutes until the vegetables are tender.

Add the shrimp to the skillet, season with salt and black pepper, and cook for 3-4 minutes or until the shrimp turn pink and opaque. Remove from heat and set aside.

Cook the Rice

In a medium saucepan, combine the long grain rice, water, and salt. Bring to a boil over high heat.

Once boiling, reduce heat to low, cover, and let simmer for about 15-20 minutes until the rice is cooked and the water is absorbed. Fluff with a fork and set aside.

Assembly

Assemble the Burrito

On a flour tortilla, place a generous scoop of the cooked rice, followed by the shrimp mixture, shredded cheddar cheese, and sliced avocado.

Top with sour cream. Fold in the sides of the tortilla and roll it up tightly to form a burrito.

Repeat with the remaining tortillas and fillings. Serve immediately, or grill the burritos for a crispy exterior if desired.
