Preparation

  1. 1

    Prepare the Ingredients

Chop the onion, green peppers, and mushrooms into small pieces. Set aside.

  2. 2

    Cook the Sausage

In a skillet over medium heat, add the sausage and cook until browned, about 5-7 minutes. Break it into smaller pieces as it cooks.

Cooking the Omelet

  1. 3

    Sauté Vegetables

Add the chopped onions, green peppers, and mushrooms to the skillet with the sausage. Cook until the vegetables are tender, about 5 minutes.

  2. 4

    Whisk Eggs

In a bowl, whisk together the eggs until well combined. Season with salt and pepper to taste.

  3. 5

    Add Eggs to Skillet

Pour the whisked eggs into the skillet over the sausage and vegetables. Allow them to cook undisturbed for about 2-3 minutes until the edges start to set.

  4. 6

    Finish the Omelet

Using a spatula, gently lift the edges of the omelet and tilt the skillet to allow uncooked eggs to flow to the edges. Cook until the eggs are fully set, about 2-3 more minutes.

Serving

  1. 7

    Plate the Omelet

Carefully slide the omelet onto a plate. Top with salsa and a dollop of sour cream.

  2. 8

    Enjoy!

Serve warm and enjoy your delicious Southwest Omelet.
