Method

Dough Preparation

1

Activate Yeast

In a small bowl, combine warm water (1.5 cups) with sugar (1 tbsp) and active dry yeast (2 tsp). Stir gently and let sit for about 5-10 minutes until frothy.

2

Mix Dough

In a large mixing bowl, combine all-purpose flour (3 cups) and salt (1 tsp). Add the activated yeast mixture and olive oil (2 tbsp). Mix until a dough forms.

3

Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let rise in a warm place for 1 hour or until doubled in size.

Filling Preparation

4

Prepare Filling

In a skillet, heat a little olive oil over medium heat. Add minced garlic (2 cloves) and sauté for 1-2 minutes until fragrant. Add chopped spinach (2 cups) and cook until wilted. Remove from heat and let cool.

5

Combine Ingredients

In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese (1 cup), and black pepper (1 tsp). Mix well and add the beaten egg (1). This will help bind the filling.

Assembly and Baking

6

Shape the Dough

Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.

7

Fill and Roll

Spread the spinach and feta filling evenly over the dough. Starting from one end, roll the dough tightly into a log.

8

Cut and Shape

Cut the rolled dough into 1-inch pieces and place them on a greased baking sheet. Cover with a cloth and let rise for another 30 minutes.

9

Preheat Oven

Preheat your oven to 375°F (190°C).

10

Bake

Brush the tops of the rolls with a little olive oil or egg wash. Bake in the preheated oven for 20-25 minutes or until golden brown.

11

Cool and Serve

Once baked, remove from the oven and allow to cool slightly before serving. Enjoy your freshly baked rolls!
