Method
Doughnut Preparation
- 1
Activate the Yeast
In a small bowl, combine the whole milk (1 cup) and active dry yeast (2 tbs). Let it sit for about 5-10 minutes until it becomes foamy.
- 2
Mix the Dry Ingredients
In a large mixing bowl, whisk together all-purpose flour (4 cups), granulated sugar (1 cup), salt (1 tsp), and ground nutmeg (1 tsp).
- 3
Combine Wet Ingredients
In another bowl, beat the eggs (2 large), melted unsalted butter (1 cup), and vanilla extract (2 tbs) together until smooth.
- 4
Make the Dough
Add the yeast mixture to the wet ingredients and mix well. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- 5
Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- 6
Shape the Doughnuts
After the dough has risen, roll it out to about ½ inch thickness. Use a doughnut cutter or two round cutters to cut out doughnut shapes. Place them on a floured baking sheet and allow them to rise for another 30 minutes.
Frying and Glazing
- 7
Heat the Oil
In a deep skillet or fryer, heat the oil (4 cups) to 350°F (175°C).
- 8
Fry the Doughnuts
Carefully place the doughnuts into the hot oil, a few at a time, and fry for about 1-2 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
- 9
Prepare the Glaze
In a medium bowl, whisk together powdered sugar (2 cups), whole milk (4 tbs), and vanilla extract (1 tsp) until smooth.
- 10
Glaze the Doughnuts
While the doughnuts are still warm, dip the tops into the glaze and allow excess to drip off. Place on a wire rack to set.
