Method

Prepare the Pork Tenderloin

    Wrap and Season

    Preheat your grill to medium-high heat. Season the pork tenderloin with olive oil, paprika, garlic powder, salt, and black pepper. Wrap the tenderloin with bacon slices, securing with toothpicks if necessary.

    Grill the Pork

    Place the bacon-wrapped pork tenderloin on the grill. Cook for about 20-25 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

Cook Papas con Chile™

    Prepare the Ingredients

    Peel and dice the potatoes. In a skillet, heat olive oil over medium heat, add the diced onion and cook until translucent. Add the potatoes and green chilies, seasoning with salt. Cook until the potatoes are tender, about 15-20 minutes.

Make Charro Beans

    Cook the Beans

    In a pot, cook the bacon until crispy. Add the diced onion and minced garlic, cooking until softened. Stir in the diced tomato, pinto beans, chicken broth, salt, and black pepper. Simmer for 30 minutes.

Prepare Enchiladas

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Fill each corn tortilla with shredded chicken or beef and shredded cheese. Roll them up and place in a baking dish. Pour enchilada sauce over the top and sprinkle with more cheese.

    Bake the enchiladas in the oven for about 20 minutes until the cheese is melted and bubbly.

Serve

    Slice the grilled pork tenderloin and serve it alongside the Papas con Chile™, charro beans, and the hand-rolled enchiladas.
