Prepare the Beans

Rinse the dried pinto beans under cold water and remove any debris. Soak the beans in water overnight or for at least 6 hours.

Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside, leaving the bacon fat in the pot.

Sauté Vegetables

In the same pot, add the chopped onion, minced garlic, and diced jalapeño pepper to the bacon fat. Sauté until the onion is translucent.

Combine Ingredients

Drain the soaked beans and add them to the pot along with 4 cups of water, cumin, and crumbled bacon. Stir to combine.

Cook the Beans

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beans are tender. Check occasionally and add more water if necessary.

Season and Serve

Once the beans are tender, season with salt to taste. Stir in fresh chopped cilantro before serving.
