    Cook the Beef

    In a skillet, heat olive oil over medium heat. Add ground beef, season with salt and pepper, and cook until browned and fully cooked, about 7-10 minutes.

    Prepare the Enchiladas

    Warm the corn tortillas in a dry skillet or microwave until pliable. Spoon a portion of the cooked beef and a sprinkle of cheese onto each tortilla, then roll them up tightly. Place the rolled enchiladas in a baking dish.

    Add Chile Con Carne

    Pour the chile con carne evenly over the top of the enchiladas. Sprinkle the remaining cheese on top.

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20 minutes, or until the cheese is melted and bubbly.

    Cook the Eggs

    While the enchiladas are baking, poach or fry the farm eggs to your preference.

    Serve

    Once the enchiladas are out of the oven, top each stack with a farm egg and garnish with fresh cilantro if desired. Serve immediately.
