Prepare the Rice

Rinse the rice under cold water until the water runs clear. Drain well.

Sauté the Vegetables

In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.

Cook the Rice

Add the rinsed rice to the saucepan and stir to coat with the oil and vegetables. Cook for about 2 minutes until the rice is lightly toasted.

Add Liquid and Spices

Stir in the diced tomato, vegetable broth, cumin, chili powder, and salt. Bring to a boil.

Simmer

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.

Mix in Peas and Carrots

During the last 5 minutes of cooking, add the frozen peas and carrots to the rice.

Fluff and Serve

Once cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, mix in the chopped cilantro, and serve warm.
