Make Enchiladas
Preheat the oven to 350°F (175°C). Spread 1 cup of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, add a few tablespoons of refried beans, 1/4 of the beef mixture, and a sprinkle of cheddar cheese. Roll up and place seam-side down in the baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top. Sprinkle with the remaining cheddar cheese.

Make Crispy Beef Tacos
In a separate skillet, heat oil for frying. Shape ground beef mixture into small patties and fry in oil until crispy. Drain on paper towels.

Serve
Serve the enchiladas hot topped with shredded lettuce, diced tomatoes, and sour cream. Add crispy tacos on the side.
