Prepare the Beans

Rinse and soak the dried black beans in water overnight or for at least 8 hours.

Cook the Beans

Drain and rinse the soaked beans. In a large pot, combine the beans and 4 cups of fresh water. Bring to a boil, then reduce heat and simmer for about 1 to 1.5 hours, or until the beans are tender.

Sauté the Aromatics

In a separate skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and cook for an additional minute.

Combine and Season

Once the beans are tender, drain any excess water if necessary. Stir in the sautéed onion and garlic mixture, cumin, salt, black pepper, and lime juice. Mix well and let it cook for another 5-10 minutes.

Serve

Remove from heat, stir in chopped cilantro, and serve warm.
