Prepare the Duck
Season the duck legs with salt and black pepper. Heat vegetable oil in a large skillet over medium-high heat. Add the duck legs skin-side down and cook until the skin is golden brown and crispy, about 8-10 minutes. Flip and cook for another 8 minutes.

Make the Tamarind Sauce
In a small saucepan, combine tamarind paste, brown sugar, soy sauce, and water. Stir well and bring to a simmer over low heat, cooking for about 5 minutes until slightly thickened.

Steam the Vegetables
In a separate pot, add mixed vegetables and steam until tender, about 5-7 minutes.

Place crispy duck legs on a plate, drizzle with tamarind sauce, top with fried red onions, and serve with steamed mixed vegetables on the side.
