    Cook the Breakfast Potatoes

    In a skillet, heat a tablespoon of oil over medium heat. Add the diced breakfast potatoes and cook until golden brown and crispy, about 10-15 minutes. Stir occasionally, season with salt and pepper to taste. Remove from skillet and set aside.

    Cook the Sausage

    In the same skillet, add the breakfast sausage. Cook until browned and cooked through, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Sauté the Vegetables

    Add the diced bell pepper and onion to the skillet with the sausage. Cook until softened, about 3-5 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs together. Pour them into the skillet over the sausage and vegetables. Stir gently until eggs are fully cooked, about 3-4 minutes.

    Assemble the Burrito

    Lay a flour tortilla flat on a clean surface. Spoon a portion of the sausage, vegetable, and egg mixture into the center, followed by a sprinkle of shredded jack cheese and a portion of breakfast potatoes.

    Fold in the sides of the tortilla and roll it tightly from the bottom up to encase the filling completely. Repeat for the remaining tortillas.

    Smother the Burritos

    Place the rolled burritos in a baking dish. Pour salsa over the top and sprinkle with any remaining jack cheese. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until heated through and cheese is melted.
