Method

Breakfast Potatoes

  1. 1

    Prepare the Potatoes

Wash and dice the russet potatoes into small cubes.

  2. 2

    Season and Cook

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and paprika. Cook for about 20-25 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

Smoked Pork Carnitas

  1. 3

    Prepare the Pork

In a slow cooker, place the pork shoulder and season with cumin, oregano, chopped onion, minced garlic, orange juice, lime juice, and chicken broth.

  2. 4

    Cook the Pork

Cover and cook on low for 8 hours or until the pork is tender and easily shredded with a fork. Once cooked, shred the pork and mix with the juices.

Eggs

  1. 5

    Cook the Eggs

In a non-stick skillet, cook the eggs to your preference (scrambled, fried, or poached). Season with salt and pepper to taste.

Assembly

  1. 6

    Assemble the Dish

On a plate, layer the crispy breakfast potatoes, top with the smoked pork carnitas, and add the cooked eggs. Sprinkle with crispy onions and jack cheese. Drizzle generously with Carolina BBQ sauce.
