Chicken Fried Steak

Prepare the Steak
Tenderize the beef round steak using a meat mallet until about 1/2 inch thick. Season both sides with salt, black pepper, and paprika.

Dredge the Steak
In a shallow dish, pour the buttermilk. In another shallow dish, combine flour, salt, black pepper, and paprika. Dip each steak into buttermilk, then coat with flour mixture. Set aside.

Fry the Steak
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded steaks and cook for about 4-5 minutes on each side or until golden brown. Remove and place on paper towels to drain excess oil.
Sausage Gravy

Cook the Sausage
In a skillet, cook the pork sausage over medium heat until browned, breaking it apart with a spatula.

Make the Gravy
Sprinkle flour over the cooked sausage and stir to combine. Gradually add milk while stirring continuously until the gravy thickens. Season with salt and black pepper.
Breakfast Potatoes

Prepare the Potatoes
Wash and cut baby potatoes into quarters. In a bowl, toss the potatoes with olive oil, salt, black pepper, and garlic powder.

Cook the Potatoes
Spread the seasoned potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes or until crispy and golden. Toss with fresh parsley before serving.
