Potato Preparation

    Prepare Potatoes

    Wash and dice the Russet potatoes into small cubes.

    Cook Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, season with salt and black pepper, and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy.

Vegetable Preparation

    Chop Vegetables

    While the potatoes are cooking, chop the red bell pepper, green bell pepper, and onion into small pieces.

    Add Vegetables

    Once the potatoes are nearly cooked, add the chopped bell peppers and onion to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.

Egg Cooking

    Cook Eggs

    In a separate pan, cook the eggs to your liking (scrambled, sunny-side-up, or over-easy).

Assembly

    Assemble Hash

    Once the potatoes and vegetables are cooked, plate the hash mixture in a bowl or plate.

    Place the cooked eggs on top of the hash.
