Preparation of Breakfast Potatoes

    Chop and Cook Potatoes

    Dice the potatoes into small cubes. In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, salt, black pepper, and paprika. Cook, stirring occasionally, for about 15-20 minutes or until the potatoes are golden brown and tender.

    Cook the Eggs

    In a separate non-stick skillet, cook the eggs to your liking (sunny side up, scrambled, etc.). Season with a pinch of salt and pepper.

    Prepare the Chicken and Beans

    In the same skillet used for the eggs, add the grilled chicken and black beans to heat through for about 3-4 minutes.

    Assemble the Hash

    Once the potatoes are cooked, layer them on a plate. Top with the grilled chicken and black beans mixture, followed by the cooked eggs. Sprinkle jack cheese, queso fresco, and roasted red peppers on top.

    Slice the avocado and arrange it on the side. Serve the Cali Hash with warmed corn tortillas.
