Preparation Directions
1. Prepare the Cedar Plank
Soak the cedar plank in water for at least 1 hour to prevent it from burning during grilling.
2. Make the Mustard Butter
In a bowl, mix the softened butter with whole grain mustard until well combined. Set aside.
3. Cook Wild Rice
In a saucepan, bring the vegetable broth (or water) to a boil. Add the wild rice, cover, and reduce heat. Simmer for 45-50 minutes until tender, then fluff with a fork.
4. Prepare Salad
In a large bowl, combine cooked wild rice, cherry tomatoes, cucumber, parsley, olive oil, lemon juice, salt, and pepper. Mix well and chill in the refrigerator.
5. Grill the Salmon
Preheat the grill to medium-high heat. Place the soaked cedar plank on the grill for 3-5 minutes until it starts to smoke. Place the salmon fillet on the plank, and spread the mustard butter over the top. Close the grill lid and cook for 15-20 minutes, or until the salmon is cooked through.
6. Serve
Remove the cedar plank from the grill. Serve the grilled salmon alongside the chilled wild rice salad.
