Preparation

Marinating the Chicken

1. Prepare the Marinade

In a bowl, whisk together olive oil, lemon juice, garlic powder, dried oregano, salt, and black pepper.

2. Marinate the Chicken

Place the chicken breasts in a large zip-top bag or bowl and pour the marinade over them. Ensure the chicken is well-coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, preferably 2 hours for best flavor.

Grilling the Chicken

Preheat your grill to medium-high heat.

Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

While the chicken is resting, prepare all toppings: slice the tomato and onion, chop the romaine lettuce, and crumble the feta cheese.

On a large platter or individual plates, spread a layer of hummus. Top with sliced grilled chicken, tzatziki sauce, pickles, sliced tomatoes, red onion, Kalamata olives, crumbled feta, and chopped romaine. Drizzle Greek vinaigrette over the top.
