1. Preheat your oven to 350°F (175°C).

2. In a small bowl, mix together the cinnamon, sugar, and salt. Set aside.

3. Cut each pita bread into 8 wedges. You will have a total of 32 wedges.

4. In a large mixing bowl, combine the pita wedges and olive oil. Toss until all wedges are evenly coated.

5. Sprinkle the cinnamon-sugar mixture over the oiled pita wedges. Toss again to ensure even coating.

6. Arrange the coated pita wedges in a single layer on a baking sheet. Make sure they are not overlapping.

7. Bake in the preheated oven for 10-12 minutes or until they are golden brown and crispy, flipping halfway through.
