Nachos

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Prepare the rice

Add the rice to the saucepan and stir to coat it in the oil. Pour in the vegetable broth or water, and add cumin, salt, and pepper. Bring to a boil.

Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.

While the rice is cooking, rinse and drain the black beans (if using canned). In a small saucepan, heat the black beans over medium heat, adding salt and pepper to taste.

Once the rice is cooked, fluff it with a fork and serve it alongside the heated black beans. Garnish with fresh cilantro if desired.

In a large bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

Make the Meatballs

Form the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet.

Preheat the oven to 200°C (400°F). Bake the meatballs for 20-25 minutes until browned and cooked through.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add crushed tomatoes, dried oregano, salt, and black pepper to the skillet. Stir well and simmer for 15 minutes.

Once the meatballs are cooked, add them to the sauce. Simmer for an additional 10 minutes.

While the sauce is simmering, cook spaghetti according to package instructions until al dente. Drain and set aside.

Serve the spaghetti topped with meatballs and sauce. Garnish with fresh basil.

In a mixing bowl, combine the flour, sugar, and salt. Add the butter and mix until crumbly. Stir in the egg and white wine/vinegar. Knead until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Make the Cannoli Shells

Roll out the dough to about 1/8 inch thick and cut into circles, about 4 inches in diameter. Wrap each circle around a cannoli tube and seal the edges with a bit of water. Heat oil in a deep pan to 350°F (175°C) and fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Roll and Fry the Shells

In a bowl, mix the ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in the chopped strawberries and mini chocolate chips.

Prepare the Filling

Once the shells have cooled, carefully remove them from the tubes. Fill each shell with the strawberry and chocolate chip mixture using a pastry bag or a spoon.

Dust with additional powdered sugar if desired and serve immediately.

In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until thickened.

Once the grits are cooked, stir in the butter and cheddar cheese until melted and creamy. Remove from heat and keep warm.

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cajun seasoning, cooking for 3-5 minutes until shrimp are pink and cooked through. Season with black pepper to taste.

Cook the Shrimp

Spoon the creamy grits onto plates and top with the shrimp mixture. Garnish with sliced green onions and serve immediately.

In a skillet over medium heat, cook the hot dog sausages until heated through and slightly browned, about 5-7 minutes. Remove from heat and set aside.

In the same pot used for the pasta, melt the butter over medium heat. Stir in the milk and bring to a simmer. Add shredded cheddar cheese, salt, and black pepper, stirring until melted and smooth.

Prepare the Cheese Sauce

Add the drained macaroni to the cheese sauce, mixing to coat the pasta evenly. Stir in the diced pickles for added flavor.

Combine Pasta and Sauce

Place a hot dog sausage into each bun. Top with the cheesy macaroni mixture, and add extra pickles if desired. Serve immediately.

In a separate bowl, mix flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined.

Prepare the Topping

Preheat the oven to 350°F (175°C). Pour the peach mixture into a greased 9x13 inch baking dish. Spoon the batter over the peaches evenly. Bake for 40-45 minutes, or until the topping is golden and a toothpick comes out clean.

Add the cooked macaroni to the cheese sauce and stir to combine. Keep warm.

Grill or pan-fry the hot dog sausages until they are fully cooked and browned, approximately 5-7 minutes.

Place each sausage in a bun, top with a generous scoop of mac and cheese, and add sliced pickles on top.

In a small bowl, mix together onion powder, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the pork shoulder.

Prepare the Pork

Place the pork shoulder in a slow cooker. Add apple cider vinegar, brown sugar, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Cook the Pork

Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with BBQ sauce. Let it warm for an additional 30 minutes.

Toast the hamburger buns if desired. Place a generous serving of pulled pork on the bottom half of each bun, top with pickles, and cover with the top half of the bun. Serve immediately.

If not using pre-cooked pulled pork, slow-cook your pork shoulder with spices and BBQ sauce until tender, then shred it.

Spread the tortilla chips evenly on a large baking sheet or oven-safe dish.

Layer the Nachos

Evenly distribute the pulled pork over the tortilla chips.

Sprinkle shredded cheddar cheese generously over the pulled pork.

Preheat the oven to 180°C (350°F). Bake the nachos in the oven for about 10 minutes or until the cheese is melted and bubbly.

Once out of the oven, add sour cream, salsa, jalapeños, and chopped cilantro on top.
