Preparation and Cooking
Pickle the Onions
Thinly slice the red onion and place it in a bowl. Combine honey and apple cider vinegar in a separate bowl, then pour over the onions. Let sit for at least 30 minutes to pickle.
Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and slice them in half. Toss them in a mixing bowl with olive oil, salt, and black pepper until evenly coated.
Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through.
Combine and Serve
Once the Brussels sprouts are done, remove them from the oven and toss with the pickled onions and toasted pine nuts. Drizzle with any remaining pickling liquid and serve immediately.
