Prepare the Ingredients
Peel and cube the sweet potatoes and chop the carrots, onion, and apricots. Mince the chipotle peppers and roughly chop the cilantro.
Sauté the Vegetables
In a large pot, heat a tablespoon of olive oil over medium heat. Add the onions and sauté until translucent, about 5 minutes. Then add the carrots and sweet potatoes, cooking for another 5 minutes.
Add Remaining Ingredients
Stir in the fire-roasted green chiles, minced chipotle, dried apricots, and orange juice. Bring to a simmer.
Cook Until Tender
Cover the pot and let it cook for about 20-25 minutes, or until the sweet potatoes and carrots are tender.
