Prepare the meatballs

In a large bowl, combine ground beef, chopped onion, minced garlic, parsley, cinnamon, allspice, salt, pepper, egg, and breadcrumbs. Mix until well combined. Form into small meatballs.

Cook the meatballs

In a large skillet, heat olive oil over medium heat. Add meatballs and cook until browned on all sides. Remove and set aside.

Make the sauce

In the same skillet, combine tamarind paste, sour cherry juice, sugar, water, and salt. Bring to a simmer and add the meatballs back in. Cook for 20 minutes on low heat.

Cook the rice

In a saucepan, combine Carolina Gold rice, water, and salt. Bring to a boil, then reduce heat and simmer for 18-20 minutes until rice is tender.

Roast the carrots

Preheat oven to 200°C (400°F). Toss sliced carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.

Serve

To serve, place rice on a plate, top with meatballs and sauce, and arrange roasted carrots alongside. Garnish with pine nuts and micro-greens.
