Prepare the Vanilla Base
In a medium saucepan, combine the whole milk and heavy cream. Split the vanilla bean lengthwise and scrape the seeds into the milk mixture, adding the pod as well. Heat over medium heat until the mixture is hot but not boiling.

Whisk Egg Yolks
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Return the saucepan to the stove over medium heat. Cook the mixture while stirring constantly until it thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let it boil.

Strain and Cool
Remove from heat and strain the mixture through a fine-mesh sieve into a bowl to remove the vanilla pod and any cooked egg bits. Stir in a pinch of salt. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Churn the Gelato
Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze
Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
