Cooking Instructions
- 1
Marinate the Chicken
In a large bowl, combine the yogurt, minced garlic, lemon juice, olive oil, paprika, cumin, salt, and black pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 1 hour (preferably overnight).
- 2
Cook the Rice
Rinse the rice under cold water until the water runs clear. In a pot, add 4 cups of water (or according to rice package instructions), bring to a boil, then add the rice. Lower the heat, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.
- 3
Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.
- 4
Prepare the Green Beans
While the chicken is grilling, bring a small pot of water to a boil and add the green beans. Cook for about 4-5 minutes until tender but still crisp. Drain and set aside.
- 5
- 6
Prepare the Garlic Yogurt
In a small bowl, mix some plain yogurt with minced garlic (about 1-2 cloves) and a pinch of salt. Adjust garlic to taste.
- 7
Serve the Dish
On a plate, arrange the grilled chicken, rice, green beans, salad, and garlic yogurt. Serve with warm pita bread on the side.
