Preparation and Cooking
1. Prepare the Kifta
In a large bowl, combine ground lamb, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix until well combined. Form into elongated patties (kifta) and set aside.
2. Grill the Kifta
Preheat a grill or grill pan over medium-high heat. Brush with olive oil. Grill the kifta for about 5-7 minutes on each side until cooked through and browned. Remove from grill and keep warm.
3. Cook the Rice
In a medium pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce heat to low. Cook for about 15 minutes or until rice is tender. Fluff with a fork.
4. Prepare the Green Beans
In a separate pot, bring salted water to a boil. Add the trimmed green beans and cook for 3-4 minutes until tender but still crisp. Drain and set aside.
5. Make Garlic Yogurt
In a small bowl, mix plain yogurt, minced garlic, lemon juice, and a pinch of salt. Stir until smooth.
6. Assemble the Plate
On a serving platter, arrange the grilled kifta, cooked rice, green beans, and mixed salad greens. Serve with garlic yogurt and warm pita bread on the side.
