Prepare Hummus
In a food processor, combine 1 can (15 oz) of drained chickpeas, 1/4 cup tahini, 2 tablespoons olive oil, 2 tablespoons lemon juice, 1 garlic clove, and salt to taste. Blend until smooth. Adjust consistency with water if needed.
Make Baba Ganoush
Roast 1 medium eggplant in the oven at 400°F (200°C) for about 30 minutes until soft. Let it cool, then scoop out the flesh and blend with 2 tablespoons tahini, 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 garlic clove, and salt to taste.
Prepare Za'tar Pita
Brush pita bread with olive oil and sprinkle za'tar seasoning on top. Bake in a preheated oven at 350°F (175°C) for about 5-7 minutes until warm and slightly crispy.
Fry Falafel
Shape falafel mixture into balls and fry in hot oil until golden brown, about 3-4 minutes per side.
Prepare Grape Leaves
If using canned grape leaves, rinse and drain them. If making stuffed grape leaves, prepare the filling and roll the leaves tightly.
