Cooking Pasta

    Boil the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. This will help to create a creamy sauce later.

Preparing Sauce

    Mix Eggs and Cheese

    In a mixing bowl, whisk together the eggs and grated Pecorino Romano cheese until well combined. Add freshly ground black pepper to taste.

Cooking Pancetta

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy and golden, about 5-7 minutes.

Combining Ingredients

    Combine Pasta and Pancetta

    Once the spaghetti is cooked and drained, add it to the skillet with the crispy pancetta. Toss to combine.

    Add Egg Mixture

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to coat the pasta. The residual heat will cook the eggs and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

    Serve immediately, garnishing with additional Pecorino Romano cheese, freshly ground black pepper, and chopped parsley if desired.
