Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

Season the Steak
Rub the olive oil on both sides of the steaks. Season generously with salt and black pepper to taste.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

Heat the Oil
In a large deep pot, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

Béarnaise Sauce

Make the Reduction
In a small saucepan, combine the shallots, white wine vinegar, and fresh tarragon. Bring to a boil and reduce until about 2 tablespoons of liquid remain. Strain and set aside.

Whisk the Egg Yolks
In a heatproof bowl, whisk the egg yolks with the reduction until pale and thick.

Add Butter
Melt the unsalted butter and slowly whisk it into the egg yolk mixture, a little at a time, until the sauce is thick and emulsified. Season with salt and black pepper to taste.
