Method

Steak

  1. 1

    Prepare the Steak

Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

  2. 2

    Season the Steak

Rub the olive oil on both sides of the steaks. Season generously with salt and black pepper to taste.

  3. 3

    Grill the Steak

Preheat the grill to high heat. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium rare, or until desired doneness. Remove from the grill and let rest for 5 minutes before serving.

Fries

  1. 4

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

  2. 5

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes. This helps remove excess starch and results in crispier fries.

  3. 6

    Heat the Oil

In a large deep pot, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

  4. 7

    Fry the Potatoes

Drain and pat the potatoes dry using a towel. Carefully add the potatoes to the hot oil in batches to avoid overcrowding. Fry for about 5-7 minutes until golden brown. Remove and drain on paper towels. Season with salt while hot.

Béarnaise Sauce

  1. 8

    Make the Reduction

In a small saucepan, combine the shallots, white wine vinegar, and fresh tarragon. Bring to a boil and reduce until about 2 tablespoons of liquid remain. Strain and set aside.

  2. 9

    Whisk the Egg Yolks

In a heatproof bowl, whisk the egg yolks with the reduction until pale and thick.

  3. 10

    Add Butter

Melt the unsalted butter and slowly whisk it into the egg yolk mixture, a little at a time, until the sauce is thick and emulsified. Season with salt and black pepper to taste.
