Cooking Pasta

    Boil Water

    In a large pot, bring 4-5 cups of water to a boil. Add 1 tsp of salt once boiling.

    Cook Pasta

    Add 1 cup of pasta to the boiling water and cook according to package instructions, usually about 8-10 minutes until al dente. Stir occasionally.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving a bit of the pasta water.

Sautéing Vegetables

    Prepare Vegetables

    Chop 1 cup of bell peppers, 1 cup of zucchini, 1 cup of cherry tomatoes, 1 medium carrot (sliced), and 1 cup of broccoli florets.

    Heat Olive Oil

    In a large skillet, heat 4 tbs of olive oil over medium heat.

    Sauté Garlic

    Add 2 tsp of minced garlic to the skillet and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add all prepared vegetables to the skillet. Sauté for about 5-7 minutes until they are tender but still crisp.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine.

    Add Seasoning

    Stir in 1 tsp of black pepper and mix well. If needed, add a splash of reserved pasta water for moisture.

    Finish with Cheese and Basil

    Remove from heat and mix in 0.5 cups of grated Parmesan cheese and 0.25 cups of chopped fresh basil.
