Preparation of Gelato Base

Combine Milk and Cream
In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream over medium heat. Stir occasionally until the mixture is warm but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together 4 large egg yolks and 3 tablespoons of granulated sugar until the mixture becomes pale and thick.

Cook the Mixture
Pour the tempered mixture back into the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon until it thickens and coats the back of the spoon (about 5-10 minutes).

Add Flavoring
If making vanilla gelato, split a vanilla bean and scrape the seeds into the mixture, along with the 1 teaspoon of vanilla extract and a pinch of salt.

Cool the Mixture
Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Churn the Gelato
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up before serving.

Scoop the gelato into bowls or cones and enjoy! You can also top with fruits, nuts, or chocolate sauce if desired.
