Method
Prepare the Broth
Step 1: Heat the Broth
In a large pot, combine the vegetable broth, soy sauce, sesame oil, minced ginger, and minced garlic. Heat over medium-high heat until it starts to simmer.
Cook the Vegetables
Step 2: Add Vegetables
Once the broth is simmering, add the julienned carrot, sliced bell pepper, sliced zucchini, sliced mushrooms, and chopped green onions. Let them cook for about 5-7 minutes until they are tender.
Step 3: Add Spinach
Stir in the fresh spinach and let it wilt in the broth for about 2 minutes.
Cook the Noodles
Step 4: Prepare Ramen Noodles
In a separate pot, boil water and cook the ramen noodles according to the package instructions. This usually takes about 3-4 minutes.
Step 5: Drain and Rinse
Once cooked, drain the noodles and rinse them under cold water to stop the cooking process.
Assemble and Garnish
Step 6: Combine Broth and Noodles
Divide the cooked ramen noodles between bowls and ladle the hot vegetable broth with vegetables over the noodles.
Step 7: Add Garnish
Sprinkle sesame seeds over the top, add nori strips, and add chili flakes to taste. Serve immediately.
