Broth Preparation
Prepare the Pork Broth
In a large pot, add the pork bones and cover them with 3 liters of water. Bring to a boil over high heat, then reduce the heat to low. Skim off any scum that forms on the surface.
Add Flavorings
Add soy sauce, mirin, salt, shiitake mushrooms, garlic cloves (smashed), and ginger (sliced) to the pot. Simmer on low heat for at least 12 hours, stirring occasionally.
Strain the Broth
After simmering, strain the broth through a fine-mesh sieve into another pot to remove solids. Keep the broth warm on low heat.
Noodles & Toppings Preparation
Cook the Ramen Noodles
In a separate pot, bring water to a boil. Add ramen noodles and cook according to package instructions until al dente. Drain and rinse with cold water to stop cooking.
Prepare Chashu Pork
If not pre-cooked, slice the chashu pork into thin pieces. Ensure it is heated through before serving.
Slice Green Onions
Chop green onions into thin slices for garnish.
Assembly
Assemble the Ramen Bowl
In a large bowl, add a portion of ramen noodles, ladle hot broth over the noodles, and arrange slices of chashu pork on top. Halve the soft-boiled eggs and place on the side.
Garnish
Sprinkle sliced green onions, drizzle chili oil, and top with sesame seeds. Add nori sheets on the side.
Serve
