Prepare the Batter

Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, baking powder, and a pinch of salt.

Combine Wet Ingredients

In another bowl, whisk together the dashi stock, egg, and soy sauce until well combined.

Make Batter

Gradually pour the wet ingredients into the dry mixture, stirring until just combined. Do not overmix; a few lumps are okay.

Prepare the Filling

Prepare Filling Ingredients

Dice the cooked octopus into small pieces, finely chop the green onion, and prepare the tempura scraps and pickled ginger.

Cook the Takoyaki

Preheat Takoyaki Pan

Heat the takoyaki pan over medium heat and grease the molds with a little oil.

Pour in Batter

Fill each mold of the takoyaki pan about halfway with the batter.

Add Filling

Add a small amount of diced octopus, green onion, tempura scraps, and pickled ginger into each mold.

Top with More Batter

Spoon additional batter over the filling until the molds are nearly full.

Cook the Takoyaki

Cook for about 3-5 minutes, then use a skewer or chopsticks to turn the takoyaki balls 90 degrees. Repeat until all sides are golden brown and crispy.

Remove from Pan

Once cooked through and crispy, remove the takoyaki from the pan and set aside.

Serve

Add Toppings

Drizzle takoyaki sauce and Japanese mayonnaise over the cooked takoyaki balls. Sprinkle bonito flakes and aonori on top.
