Toppings (optional)
Method
Prepare the Ice Cream
Scoop the Ice Cream
Scoop the ice cream into small balls, about 1 inch in diameter. Place the scoops on a baking sheet lined with parchment paper and freeze for at least 1 hour until firm.
Make the Mochi Dough
Combine Ingredients
In a microwave-safe bowl, mix together the sweet rice flour, water, granulated sugar, and vanilla extract until well combined.
Microwave the Mixture
Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, stir, then microwave for an additional 1-2 minutes until the dough becomes thick and sticky.
Cool the Dough
Remove from the microwave and let the dough cool slightly until it is manageable to touch, about 5 minutes. Dust your hands and work surface with cornstarch to prevent sticking.
Assemble the Mochi Ice Cream
Shape the Mochi
Take a small piece of the mochi dough (about 2 tablespoons) and flatten it into a circle about 3-4 inches in diameter. Place a frozen ice cream ball in the center and wrap the mochi around it, pinching the edges to seal.
Repeat the Process
Repeat the shaping process with the remaining ice cream and mochi dough. Place the finished mochi ice cream on the baking sheet and freeze for another 30 minutes to firm up.
Serve the Mochi Ice Cream
Dust with Toppings
Before serving, dust the mochi ice cream with powdered sugar or cocoa powder as desired.
Enjoy!
Serve immediately and enjoy your delicious homemade mochi ice cream.
