Crust Preparation

1. Preheat the Oven

Preheat your oven to 350°F (175°C).

2. Mix Crust Ingredients

In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined.

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes.

4. Cool Crust

Remove from the oven and allow to cool while preparing the filling.

In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.

6. Add Sugar

Gradually add in granulated sugar and continue beating until combined.

7. Incorporate Eggs

Add eggs one at a time, mixing well after each addition to ensure a smooth batter.

8. Add Remaining Ingredients

Mix in the heavy cream, matcha powder, vanilla extract, and lemon juice until well combined.

9. Pour Filling

Pour the green tea cheesecake filling over the cooled crust in the springform pan.

Baking

10. Bake the Cheesecake

Bake the cheesecake in the preheated oven for about 50-60 minutes or until the edges are set and the center is slightly jiggly.

11. Cool the Cheesecake

Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour.

12. Chill

Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.

Serving
