Make the Dough
In a bowl, mix warm water, yeast, and sugar. Let it sit for about 10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until the dough is smooth and elastic. Cover and let rise for about 1 hour, or until doubled in size.

Prepare the Toppings
While the dough rises, slice the sucuk, dice the tomato and bell pepper, and prepare any additional spices as desired.

Shape the Dough
Preheat your oven to 220°C (428°F). Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into an oval shape on a floured surface.

Assemble the Pide
Place the rolled dough on a baking sheet. Layer with mozzarella cheese, followed by slices of sucuk, diced tomatoes, and bell peppers. Season with black pepper and red pepper flakes.

Bake
Bake in the preheated oven for about 15-20 minutes or until the edges are golden and the cheese is melted and bubbly.

Remove from the oven, let cool slightly, then slice and serve warm.
