Preparation Steps
1. Prepare the Dough
In a bowl, mix warm water, sugar, and yeast. Let it sit for 10 minutes until frothy. In another bowl, combine flour and salt, then create a well in the center. Pour the yeast mixture and olive oil into the well. Mix until a dough forms.
2. Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.
3. Prepare the Filling
In a skillet, cook the ground meat over medium heat until browned. Add diced soujouk, black pepper, and paprika. Stir well and cook for another 5 minutes. Remove from heat and let cool slightly.
4. Assemble the Pide
Preheat the oven to 475°F (245°C). Roll out the risen dough on a floured surface into an oval shape. Transfer to a baking sheet lined with parchment paper. Spread the meat mixture evenly over the dough, leaving a border. Sprinkle with mozzarella cheese and make small indentations for the eggs.
5. Bake the Pide
Crack an egg into each indentation. Bake in the preheated oven for about 15-20 minutes or until the edges are golden brown and the cheese is bubbly.
6. Serve
Remove from the oven, let cool for a few minutes, slice, and serve warm.
