Method

Cooking Directions

  1. 1

    Prepare the Custard

In a medium saucepan, combine the milk and granulated sugar. Heat over medium heat until the sugar is dissolved and the milk is warm.

  2. 2

    Mix Egg Yolks

In a separate bowl, whisk together the egg yolks, cornstarch, and vanilla extract until smooth.

  3. 3

    Combine Mixtures

Slowly pour the warm milk mixture into the egg yolk mixture while whisking continuously to temper the eggs.

  4. 4

    Cook the Custard

Return the mixture to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon.

  5. 5

    Cool and Set

Pour the custard into individual serving dishes or a large dish and let it cool to room temperature. Then refrigerate for at least 4 hours or until set.

  6. 6

    Caramelize the Sugar

Before serving, sprinkle a thin layer of granulated sugar over the top of the set custard. Using a kitchen torch, carefully caramelize the sugar until it is golden and bubbly.

  7. 7

    Serve

Allow the caramelized sugar to cool for a minute before serving. Enjoy your Kazandibi!
