Method

Preparation Instructions

  1. 1

    Prepare the Falafel Mixture

In a food processor, combine the chickpeas, sweet onion, garlic, parsley, cumin, coriander, salt, and pepper. Pulse until the mixture is coarse but holds together.

  2. 2

    Form the Patties

Transfer the mixture to a bowl and stir in the flour and sesame seeds until well combined. Form the mixture into patties, about 1/2 inch thick.

  3. 3

    Cook the Patties

Heat a non-stick skillet over medium heat and add a bit of oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.

  4. 4

    Prepare the Tahini-Turkish Pickle Sauce

In a small bowl, combine tahini with finely chopped pickles, a squeeze of lemon juice, and salt to taste. Mix until smooth and well combined.

  5. 5

    Assemble the Burger

On a sumac-onion bun, place a lettuce leaf, then the falafel patty, and drizzle with the tahini-turkish pickle sauce. Top with another bun half.
